Eggplant : 4 pounds
Garlic : 4 large cloves
Tomatoes (canned Italian plum): 28 ounces
Olive oil (extra virgin) : 1/2 cup
Frying oil (Wesson) : As per requirement
Basil (fresh or dried) : 3 or 4 leaves or 1 tablespoon
Wine (red, not sweet) : 1/2 cup for the recipe
Salt : to taste
The first thing that you need to do while preparing the delicious Eggplant in Tomato Sauce is to peel the eggplants and then cut the eggplant into 3/4 inch cubes and as soon as you finish cutting then dip eggplant in heavily salted water for almost an hour. After an hour, drain and rinse the eggplant completely and then lay it on a kitchen towel to soak the excess water. The next step will be to fry the eggplant over medium-high heat in a frying pan and fry it till it gets the light to medium brown color. Once the egg plant is cooked then it is time to make the sauce which will served with the eggplant and the sauce can be easily prepared by following these few steps:
To make the sauce, first pour olive oil in the frying pan and when the oil is heated enough then add chopped garlic to the oil and fry it till turns light brown in color.
Then slowly start adding tomatoes, basil and wine and then cook the mixture for 10 minutes and stir it continuously.
Now you can add the cooked eggplants into the sauce and then cook it for another 20 minutes by stirring it continuously.
Finally its time to add some salt according to your taste and then cook for about five minutes before removing from the pan and the dish is perfectly ready to be served
