The Ricotta Pie is among the most popular Italian Desserts. The Ricotta Pie is prepared with Ricotta cheese and strega liquor, which are the quintessential Italian recipes. The Ricotta Pie has to be prepared in 2 stages. First you need to prepare the crust and secondly you have to prepare the stuffing for the pie. For preparing the crust you need the following ingredients:
2 and a 1/2 cups of sifted flour
1 cup of sugar
A cup of butter
1-teaspoon vanilla essence
6 eggs
1/2 cup Crisco and
1-tablespoon of the Italian strega liquor

For preparing the crust start by slicing the butter into chunks and ensure it does not melt. Cut the butter and Crisco into flour until the mixture is combined, leaving large chunks almost like the size of walnuts. Then beat eggs till they are firm and add to water. The water should be very cold and can contain tiny ice chips also. Follow with salt and vanilla. After the dough is ready, store it in airtight container in the refrigerator for at least an hour. Take it out and keep it at room temperature for at least 20-30 minutes.
Now for the filling you need the following ingredients:
Whole milk ricotta of about 4 pounds
12 large eggs
2 nip-sized bottle of anisette liquor
One and a half cup of sugar and fresh citric juice
For making the stuffing of the Ricotta Pie mix all the ingredients preferably in a blender. Cut top crusts about 1 and a 1/2 inches wide lattice strips with fancy rolling wavy-edged cutter. Now pour the filling evenly into the two piecrusts smothering the bottom with generous helpings of milk. Then add the strega liquor and the remaining of the beaten eggs so that the whole of the pie is covered fully with it. Bake this at 350 degrees for at least 40 minutes. Once the pie is cold, the Ricotta Pie is ready to be savored with the final touch of icing sugar and some grated ricotta cheese.
