Risotto

Risotto, distinctly flavoured recipe from the Italian kitchen will definitely leave you craving for more. One of the most popular Italian Main Courses is Risotto which can be made in different flavors. Enjoy the authentic Italain dish, topped with a variety of ingredients.

Preparing risotto at home requires a particular cooking skill rampant in the northern part of Italy and adopted elsewhere too. The two main ingredients required are rice and broth. The Italian variety of rice that is specifically grown in Italy used for Risotto, could anything between Arborio, Vialone Nano, or Cararoli. Available at all Italian specialty stores. The broth which is homemade could be of Chicken, vegetable, fish or meat depending on the other ingredients used in the dish. However for a simpler cooking of Risotto one can also make use of canned broth.
Start the risotto, by sautéing chopped onion in butter or olive oil over medium flame then add the rice and follow it up by wine. Once it evaporates add a small quantity of warm broth stirring it constantly. Continue for about 20 minutes, till the rice is tender. Finally garnish with vegetables, seafood, meats, a little butter and some grated Parmesan cheese. For best results the ideal risotto should be very creamy, l firm up as it cools down. In fact strawberry risotto is one of the popular Italian Main Courses during the Easters.
