In Thailand this drink is also called Cha Dhra Khai and the method involves crushing the lemon grass to release its flavor. Then boil water in a pot and add the lemon grass. After boiling it for 3 to 4 minutes add salt and sugar and then strain the tea and serve chilled with ice. Thai food is all about cooking in the most simplest of ways.
